A dinner vessel is reserved for your party — no shared tables, no stage-show conveyor belt — and casts off as the light drops, when the city softens and the minarets, tower and bridges come on one by one. Dinner is a set Egyptian menu built around charcoal grills and mezze rather than buffet theatre, served at your pace as the boat makes its slow loop between the Corniche and the island tip of Zamalek. Live oud music can be arranged, or the evening can simply be left quiet — on the water, the city's roar drops to a hum, which many guests find is the entire point.
